Welcome to the ACF Utah Beehive Chef Association's Junior Member section. This section is specifically intended for students, apprentices, and burgeoning professionals in the culinary and foodservice industry. It is to aid current junior members and to inspire non-members to join our organization, so that we may grow, learn and develop our skills, talents, and our understanding.

Therefore if anyone has ideas, thoughts, or anything that they would like to share to the Junior Chefs of Utah and by extension the entirety of the ACF please feel free to do so. Anything that further aids your fellow Chef, whether Junior or Senior, is always welcome.

14 September 2009 - Chef Meeting

There is a chef Meeting planned for the 14th of sept. The location has yet TBD. More information to follow as it becomes available.

Meeting set for 14th Sept 2009 at the LHM Campus of SLCC. That's the one in Sandy. The one that has their Culinary Kitchen. You know the one. We will be discussing nominations for Junior Board Officers as well as kicking off a new educational program. Come to the meeting to be a part of some exciting changes. 20 July 2009 – July Chef Meeting

 

20 July 2009 @ SLCC (Salt Lake Community College) Sandy Campus – the Culinary Building. 4:00 p.m. will start the Junior Meeting, General meeting to follow. We will be discussing:

- Charity Event: what charity(s), where, when, what, etc.

- Beginning the process for new Junior Officers: what positions, nomination procedures, changing terms of office to one year rather then two, etc

- Junior Chef of the Year/Student Chef of the Year nominations, award procedures and requirements

Video Opportunity - 6 - 10 July

There is an opportunity next week from Monday to Friday (as in next week 6-10) 1pm - 6pm (Mon – Weds) and all day (Thurs – Fri) for anyone that wants to get their feet wet as a consultant on some videos. It is for Shelf Reliance food storage and they are doing some videos of recipes. The work would entail hlelp with mise en place and give some tips and stuff. Nicholas Food Show - 9 & 10 May 2009

As many of you know, the Nicholas Foodshow is coming up. We invite all Juniors to attend the show - it is free to do so. Please come and speak with vendors and proffessionals aout new trends, food items, and ideas. We also invite you to support your collegues and friends who are competing at the show, both days of course.

Sales West is looking for people who would be willing to help at the show. The hours are: Tues - 9 a.m. to 5:30 p.m., and Weds - 9 a.m. to 4 p.m. They are willing to pay a $100 a day for the help. If you are interested please contact Dareq Wazir (contact info on the "welcome" tab).

Another one is in the books. The Junior Board would like to thank all the Culinary Students and junior Members who volunteered and participated in this years event. Everyone did and outstanding job; and without your assistance the event would not have been possible. Thank You.

Review of Meeting - 11 May 2009

We just had another great Jr. and General Membership Chef Meeting, held at the University Park Marriott in Salt Lake City. It is apparently summer time, because we did not have has many juniors and students as we have had at the last several meetings. To the students who are doing other things over the summer, we still invite you to attend the meetings – important stuff is going on. Chef Frank Kraus of the Arts Institute was introduced to the juniors as our new Junior Liaison to the Board. We are thrilled to have him on board with us and are looking forward to moving forward as a junior chapter. We are still in the planning stages of a fundraising drive. At this time we have secured an outdoor BBQ grill. Several locations have been looked at in the Provo/Orem region. We still need help with this, even for the planning so we can get this up off the ground. If you have any ideas please contact Shane Kenefick and/or John Thomas who are spearheading this effort.

For those who competed in the last K/P competition, and/or the Cold Salon, the results are still not out. The medals have not yet arrived. President Chef Troy Wilson has announced that they will be presented at the next meeting - which I believe is 13 July.

We are having a chapter picnic – Monday, June 22, 2009 at Lagoon. Through the chapter you will be able to purchase discounted tickets. The cost is only 20 per person (for yourself and family members who want to go with you). You must contact the chapter and pay before the event. Your tickets will then be held at the Will Call at Lagoon on that day.

To review the Junior Meeting:

1) We are hopefully planning a fundraising event in the early part of July. If any want to help or have input please contact Shane Kenefick or John Thomas.

2) Chris Straughan from the Copper Skillet is asking the Juniors what they would like to see in the magazine. What would draw you to read it more, what intrests do you have that would be poignant? Please join the discussion at the ACF Beehive Junior Chefs Facebook page to give your thoughts and insights.

3) Kristie is still looking for recipes for the cookbook being compiled for Chef and a Child. Please send your recipes for the kids. Remember it is for kids 9 to 12, no sharp utensils, not cook top or oven. Microwave okay is and possibly toaster oven.

HI, this is Kristie chidester, Jr. VP.

I am contacting you all in regards to a portion of the charity associated with the Gala for Big brothers, Big Sisters. I am working for Chef Wendy and compilling and binding a recipe book for the childeren. The recipes will be combined with some art work from the children and one hard bound copie will be auctioned off and have the original art work in it. The recipes will come from chefs in our chapter, that is where I need your help. I need between 30-50 recipes from you all total, so if you have one or two to share it would be very helpful. These are the guidelines; must have no more than 8 common ingredients, must not require the use of tools sharper than a peeler or butter knife, must not require the use of the stove top or oven, microwave ok.. The recipes are geared toward 9-12 year olds that may be on their own for some meals and snacks.Thank you and when you send me your recipes, will you please send a small statement of how you feel about childrens health and nutrition, or the importance thereof. I am really hopeing to have all the recipes in my posession by march 2nd, so as soon as is convenient for you very busy chefs is very much appreciated!

If anyone is interested in catering a wedding in Jun, Marci Peterson has a friend who is looking for cupcakes for her wedding - around 250 to 300. Festival of Trees - 6-8 Dec 2008
We are planning on uniting all the juniors and culinary schools to help this year at the Festival of Trees. More then likely it will consist of donations of baked goods to the festivals bakeshop and candy store(s).

Another Chance to Help in our Community - 25 Oct 2008

The Andrew J. Peterson Foundation is hosting another event for the benefit of children in the Shock Trauma Intensive Care Unit. You can find out more under the "In the Community" tab.

We need two volunteers to help out with food preparation and delivery. If you are planning on going to the President's Dinner, we should be done by 5:45 p.m. and that should give you time to get up to the U. Park Marriott for the reception and dinner. Chef's Summer Social - 18 Aug 2008

The Beehive Chef's Association is having a summer social gathering at Lagoon. You may attend the park all day, but the General meeting will be held at 6:00 p.m. with the Junior meeting at 4:00 p.m. The price is $18.95 + tax. Members will be receiving a flyer in the mail within a day or so. Please return the bottom portion to RSVP.

For those Junior Members who helped at the Western Regional Conference and Chef and a Child events, the chapter is thanking you by giving you free admission to the park. Volunteers Needed for K Competition - 11 June 2008

Hello All!

I need about 4 student volunteers to help with the Nicholas K competition on the 11th. They will be helping with running plates for the competitors, helping the competitors get out of their stations, and speed deep cleaning the competition area afterward to prepare for the iron chef competition following. I need bodies at the South Towne Center NO Later than 7:30 for briefing. This is a great way for those who are too timid to compete this time to see what it is all about for next time. Cat. K & P Competition - 11 & 12 June 2008

Competition time is almost here again. The 11th and 12th of June, at the Nicholas Food show held at the South Towne Expo Center will see a variety of Culinary Competitions. Junior Members are invited to attend the show and see what competitions are all about, and are highly encouraged to participate.

If you are interested in participating, contact Chef Wendy Hunter (contact info is available under the "contacts" tab). She can get you the necessary forms. For info on what the various competitions entail check out the national website acfchefs.org, and look under "online resources" and then under "downloads". There is a selection that says Culinary Competition Manual.

Junior Chef Meeting - 12 May 2008

The May Chefs' meeting is being held on 12 May. Location: Little America Hotel (500 South Main Street), Time: 4:00 p.m. to 5:00 p.m. for Junior Meeting and 5:00 p.m. to 6:30 p.m. for General meeting. Please come as we talk about the happenings at the Western Regional Conference, and thank all the volunteers who made it a wonderful success.

On the Agenda:

- We will also be doing a cursory look at competitions and certification practical testing as it applies to students and Junior members.

- Discussing Chef and a Child on 15 May. Remember we are still looking for volunteers.

- Open discussion on issues the Junior membership may have.

Chef Todd Leonard is needing help from the juniors for Chef and a Child, May 15 2008. Current information says there will be 10 stations and he needs 2 juniors/students per station. Western Regional Conference

The ACF Beehive State Chef's Chapter Juniors participated in the Team Hot/Cold food competition. Junior Team Utah was represented by: Vicki Maxfield, Julia Olsen, Christian Kubak, Joy Burton, and Nate Breneman - and coached by Peter Sproul and the other culinary educators at Utah Valley State College.

Congratulations to Junior Team Utah for earning a Silver Medal and coming in Second Place overall.

In-the-Community



I Believe I Can Fly Event
This event shall be a charity fundraiser for the mission statements of the Andrew J. Peterson foundation. They are a public charity 501 c3. This event shall be held at the Young Chefs' academy on Aug 23, 2008.

Chefs from the Junior Chapter of the ACF Beehive State Chef's Association shall be working with the children on making a healthy and yummy lunch. The children will get to participate in making the lunch and then eating it.

The fabulous Lindsey Taylor and Zumba teachers will then teach the children how to Zumba - the hottest dance exercise craze out there.


The "I Believe I Can Fly" Program is for the children of our communities. The program consists of several elements to help our children gain positive self-esteem and the ability to believe in ones self. Teaching children to find the best qualities they have and being individual is grand.

The elements contain exercise, nutrition, and positive stimulation of the mind that will create positive energy and self strength. The program is in the infancy stages and we will build upon the program to have the future generational leaders understand their communities and how to strengthen them.

The Andrew J. Peterson Foundation has desires for our children to do the best with their abilities and to set goals in their lives. They want the children of our community to find inner strength and positive power to overcome obstacles they may face. For it is not what happens to us in our life, it is how we brush off our knees and move forward that truly counts.

Inspiring the children of our community is a set goal at the Foundation. Those at the Foundation will work hard to develop determined, strong, and creative children to rise up with the world and embrace the challenges of life.

Those at the Foundation have obtained knowledge from their experience, which they would like to share with the community to help preserve future generations. They continue to research, learn, and encourage the same from all hat surrounds us. Please join the Andrew J. Peterson Foundation and the Beehive State Chef's Association in support of this program as we love and nuture children of all ages and want the best for them.

The Andrew J Peterson foundation is teaming up with the Shock Trauma Intensive Care Unit (STICU) at Intermountain Medical Center to present AN AFTERNOON TO CULTIVATE THE MIND SPIRIT AND SOUL. Shock Trauma Intensive Care Unit (STICU) at Intermountain Medical Center. This event is currently in the planning stages, but we are also working with the Foundation to aid in a Halloween concert this October. Details will be announced as they become available.

Marci and Andy are awesome people and are willing to work with us and get our names out to the public, as well as allow us the opportunity to help out for some great causes.
