Job Description Valley Services, Inc., a national contract food service management company

based in Mississippi, has an excellent opportunity for an Assistant Food

Service Director with our Senior Services Division in beautiful Salt Lake

City, Utah.

management to a variety of industries and serve nearly 300,000 meals each day

Valley Services, Inc. employs more than 2,500 production employees, at least

50 Registered Dietitians and 200 exempt level managers.  We service more than

200 client accounts including hospitals, colleges and universities,

commercial and office building cafeterias, senior services, meals on wheels

programs, correctional facilities and daycare facilities.



The Assistant Food Service Director is responsible for assisting the Food

Service Director with the hands-on directing of the unit to ensure that

Valley's Vision, Goals and Objectives are met based on client and contractual

obligations.  The Assistant Food Service Director ensures that quality

nutritional food is provided to all customers and that professional standards

are met and maintained in the unit. The Assistant Food Service Director

performs all functions of the Food Service Director in their absence.



The Assistant Food Service Director will be responsible for the entire

kitchen's activities which encompass the preparation of senior meals, day

care and Head Start meals, catering, senior quarterly buffets, alternate

meals for the seniors, the cafeteria; dish room activities, receiving orders,

ordering food, inventory, planning monthly cafeteria menus, sanitation and

food safety of the unit, packing out meals, and weekly financial reports. 



The successful candidate will possess the following skills:



*        Detail Oriented - Will be responsible for the entire kitchen's

activity including the preparation of several menus daily, catering

activities, staffing job assignments and tasks, daily and weekly financial

reporting, etc.  Must be able to effective communicate details of completed

tasks to the hourly staff as well as the Food Service Director. 



*        Organized - Will be responsible for organizing daily activities in

the kitchen with the various menus and areas of food preparation.  Must be

able to plan and organize the kitchen staff to assign work tasks. 



*        Effective Communicator - Fluency in Spanish is not required.

However, knowing some conversational Spanish would be beneficial in order to

communicate with all staff members. 



*        Culinary Art Skills - Must have a strong demonstrated history with

hands on cooking skills, directing the cooks in their tasks and new menu

production, and cooking a diverse menu.   



*        Management Skills - Must be able to effectively manage people with a

diverse background of work skills, language skills, etc.  Must be able to

work well with others, inspire and motivate people in order to complete the

job tasks at hand.  Must be a team player and develop a good rapport with all

levels of staff.



The successful candidate will also have a demonstrated work history in

meeting the following objectives:



*        Cost Containment - Must have previous experience in developing and

implementing cost saving measures with food, supplies, and other resources.



*        Ordering - Responsible for placing food orders 5 days a week and in

the amounts to meet the requirements for the four (4) menus used daily in

addition to catered functions. 



*        Inventory - Responsible for taking inventory weekly, updating

inventory sheets, and transferring the inventory on an Excel spreadsheet.

Must have previous experience on how to control and secure inventory to

ensure the budget is met and costs are in line weekly.



*        Financial - Must ensure that all financial reports and activities are

processed accurately.  Daily responsibilities include counting the cafeteria

cash tills, making bank deposits, updating inventory pricing, completing and

sending out catering invoices, posting invoices to the A/P system.  Weekly

tasks include completing financial reports and communication of budget

deviations and the reason for it.   Must have an understanding of budgets and

adhere to it weekly, monthly, and annually.



*        Sanitation and Food Safety.  Must be ServSafe Certified and ensure

"clean as you go" work practices in or for all staff to meet the client's

high standards for sanitation and food safety.

Qualifications REQUIREMENTS: High school diploma or GED with at least two (2) years experience in food service management, which should include: (a) directing volume food production; (b) converting recipes and quantifying amounts to actual count requirements; (c) maintaining inventory levels sufficient to meet food product and supply requirements; and (d) handling complaints from customers and clients quickly and satisfactorily. Previous supervisory experience required. Must possess a valid driver?s license. A current Motor Vehicle Report must meet the applicable minimum requirements for violations as indicated by Valley?s policy.
